Simple Sugar Cookies
- Ingredients
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 cup butter, at room temperature
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 1/2 cups all-purpose flour
- 1 cup whole wheat flour, plus more for rolling dough
- 1/2 teaspoon salt (omit if using salted butter)
- 1 tablespoon cinnamon
- 1/2 teaspoon food coloring (optional)
- Equipment
- Handheld or stand mixer
- Large bowl
- Cutting board
- Rolling pin
- Baking sheet
- Wire racks
- Cookie cutters
- Plastic wrap
- Let butter sit at room temperature until soft, preferably all day or overnight.
- Cream butter with sugar and brown sugar.
- Add egg, vanilla extract, almond extract and food coloring (if using).
- Combine all-purpose flour, whole wheat flour, salt (if using) and cinnamon. Add dry ingredients to butter mixture. Mix with, slowly at first, until mixture forms a ball around mixer and pulls away from the sides of the bowl.
- Cover and refrigerate for at least four hours and up to overnight.
- Preheat oven to 350 degrees. Roll out dough, in portions, on a floured cutting board using a floured rolling pin. Touch the dough as little as possible because it will get sticky as it heats up. Cut out with cookie cutter of your choice and, if desired, add sprinkles or cinnamon before baking.
- Instead of cookie cutters, you can use plastic wrap to roll the dough into logs before refrigerating and then slice into rounds.
- Lay cookies on an ungreased baking sheet, evenly spaced, and bake for 8 to 10 minutes. Let cool completely on a wire rack before frosting.
