Double Chocolate Zucchini Cake
- 2 tablespoons ground flax seed
- 6 tablespoons water
- 1/2 cup canola oil
- 1/2 cup apple sauce
- 2/3 cup sugar
- 1/2 cup soured milk (sour by adding 1 teaspoon vinegar)
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 4 tablespoons cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 2 cups shredded zucchini
- 1/2 cup chocolate chips
- Mix flax seed and water together; set aside.
- Place oil, apple sauce, sugar and your mixture in bowl; cream.
- Add all remaining ingredients except zucchini and chocolate chips; mix well.
- Stir in zucchini. Pour into greased 9 x 13 pan. Sprinkle chocolate chips on top. Bake at 350 degrees for 40 minutes.
