Cajun Spiced Salmon With Sundried Tomato-Rosemary

  1. Sauce:
  2. In mini chopper,puree sun dried tomatoes with the rest of ingredients. Bring to boil, then simmer in small sauce pan for flavors to meld while salmon cooks.
  3. Salmon:
  4. Melt oil & butter together in microwave. Brush both sides of fish. Broil, presentation side down, about 3 min. Turn and sprinkle with blackening seasoning. Broil an additional 3 min. or until desired doneness. Top with sauce.
