Cajun Spiced Salmon With Sundried Tomato-Rosemary
- Sauce:
- 1/4 cup sun dried tomatoes, softened in water in microwave
- 2 cloves garlic, minced
- 2-3 sprigs finely chopped rosemary
- 1/4 cup red wine
- 8 oz. tomato sauce
- Salt & Pepper to taste
- Salmon:
- 4 salmon filet, 5-6 oz. each
- 1 TBS. olive oil
- 1 tsp. butter
- Blackening seasoning
- Sauce:
- In mini chopper,puree sun dried tomatoes with the rest of ingredients. Bring to boil, then simmer in small sauce pan for flavors to meld while salmon cooks.
- Salmon:
- Melt oil & butter together in microwave. Brush both sides of fish. Broil, presentation side down, about 3 min. Turn and sprinkle with blackening seasoning. Broil an additional 3 min. or until desired doneness. Top with sauce.
