Village Salad (Horiatiki)
- 2 Heirloom red Tomatoes
- 2 Heirloom yellow Tomatoes
- 2 Heirloom orange Tomatoes
- 1 small Red Onion
- 1 Cucumber
- 1 Garlic Bud
- 1 Sprig Fresh Oregano
- Fresh ground peppercorns
- 2 oz Extra Virgin Olive Oil
- 1 oz Aged Balsamic Vinegar or to taste
- 4 oz Feta Cheese
- 12 Kalamata Olives
- 1/2 Lemon
- 1. Wedge the tomatoes.
- 2. Cut the onion and cucumber to match the tomato wedge size.
- 3. Mince the garlic and the oregano leaves.
- 4. Toss all the above ingredients together with a liberal grinding of peppercorns.
- 5. Drizzle with olive oil and retoss.
- 6. Drizzle with Balsamic and retoss.
- 7. Plate and top with Feta , Kalamata olives and a light squeeze of lemon.
