Banna Walnut Muffins
- 2 Cups White Whole Wheat Flour
- 2 Teaspoons Baking Powder
- 1/4 Teaspoon Baking Soda
- Pinch Salt
- 1/4 Teaspoon Nutmeg
- 1/2 Teaspoon Cinnamon
- 1 Cup Chopped Walnuts
- 1/2 Cup Golden Raisins
- 3/4 Cup Light Brown Sugar
- 2 Large Eggs (or egg substitute)
- 1 cup of mashed Ripe Banana (2 medium sized Bananas)
- 1/1 Cup Lemon Yogurt
- 1 Tsp Vanilla
- Preheat oven to 325 degrees.
- In a Medium bowl whisk to combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon. Set aside
- In a large mixing bowl mix over low speed eggs and sugar until frothy. Add mashed bananas, yogurt, and vanilla. Mix to combine.
- In three equal additions add the dry mix to the wet mix, mixing until just combined.
- Add Walnuts and Raisins and stir with wooden spoon to combine and spread through batter.
- Fill muffin cups with batter 3/4 full.
- Bake for 20-28 minuets at 325 Degrees.
