Date Muffins With Cinnamon Frosting
- 3/4 cup coarsely chopped seeded dates
- 1/4 cup water
- 1/4 tsp bicarbonate of soda
- 1 1/2 cups white self - raising flour
- 1 cup whole-meal self - raising flour
- 1 tsp mixed spice
- 3/4 cup firmly packed brown sugar
- 1 egg, beaten lightly
- 1 cup buttermilk
- 1/2 cup vegetable oil
- Cinnamon Frosting
- 90g packaged cream cheese
- 90g butter
- 1 cup icing sugar mixture
- 1 tsp ground cinnamon
- 1.treheat oven to moderately hot. Grease 12-hole muffin pan.
- 2.tombine dates and the water in small saucepan, bring to a boil. Remove from heat, add soda; stand for 5 minutes.
- 3.tift dry ingredients into large bowl; stir in date mixture and remaining ingredients. Spoon mixture into prepared pan. Bake in moderately hot oven about 20 minutes. Spread top of cold muffins with cinnamon frosting.
- 4.tinnamon Frosting: Beat cheese and butter in small bowl with electric mixer until as white as possible. Gradually beat in combined icing sugar and cinnamon.
