Cranberry Bread (Healthy)
- 2 cups flour
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 cup halved raw cranberries, washed, stems removed
- 1/4 cup chopped nuts
- 1/2 cup wheat germ
- 3 TBS grated orange rind
- 2 egg whites
- 1/2 cup orange juice
- 1/4 cup warm water
- 2 TBS orange juice
- 2 TBS oil
- preheat oven to 350.
- sift together dry ingredients. Stir in cranberries, pecans, wheat germ and orange peel. In separate bowl, combine egg, orange juice, water and oil. Add to flour mixture, stirring just enough to moisten. Spoon into 9X5X3 loaf pan sprayed with vegetable spray. bake 350 degrees for 50-60 minutes or until done. cool in pan for 5 minutes before removing and cooling on rack.
