Black Truffle Cookie Bars
- 1 lb. bitter sweet chocolate, chopped
- 1 stick and 3 tbsp butter
- 1/2 C all purpose power
- 1/2 tsp baking powder
- Pinch of salt
- 4 eggs
- 11/4 C granulated sugar
- 11/2 tsp vanilla
- 11/2 C finely chopped walnuts (or whatever nuts you like)
- 2 C semisweet chocolate chips
- Preheat oven to 350 F
- Melt chocolate and butter in microwave (use defrost cycle, stirring occasionally) DO NOT BURN. Set aside.
- Beat eggs, sugar, and vanilla in a bowl until sugar granules are not apparent.
- Pour in chocolate mixture and mix well.
- Sift flour, baking powder and salt together.
- Fold sifted flour into the chocolate mixture. Add nuts and chips.
- Chill batter for about 1 hr (or until solid).
- Place parchment paper on a cookie sheet. Scoop mixture ~1 1/2 inch balls onto the sheet, about 2 inches apart.
- Bake 12-15 minutes until cookies no longer look wet in the middle. Remove and place on cookie rack.
