Crispy Cornmeal Fritters
- 2 cups flour
- 1/2 cup fine cornmeal
- 2 packed tbs lt brown sugar
- 2 tsp baking powder
- 1 tsp salt
- 4 tbs cold unsalted butter cut into 1/2 inch cubes
- 1 cup evaporated milk
- 1 quart oil for frying
- 1. In large bowl whisk together flour, cornmeal, brown sugar, baking powder and salt. Using pastry blender cut in chilled butter cubes till mixture resembles coarse meal. Add evaporated milk and stir till dough forms. Turn out onto lightly floured surface. Knead till smooth, 1 min. Cover with plastic wrap. Let stand 15 min
- 2. On a lightly floured surface use your hands to roll the dough out into a long thick rope. Cut into 24 even pieces. Roll each piece into a 9 inch rope. Bring both ends together and twist tightly into a rope
- 3. In large saucepan fitted w/ thermometor heat oil to 350. Fry twists in batches of 8 at a time till golden all over. 2-3 min. Drain on paper towels. Serve hot.
