Lia'S Pasta
- 1 red pepper julienned
- 1 yellow pepper julienned
- 3 tbs olive oil
- 1 packet chicken bouillion grains or one cube
- 8 0z cream cheese
- 3 tbs milk
- 1 lb penne pasta
- 1/2 cup grated parmesano cheese plus more for the table
- fresh flat leaf parsley chopped for garnish
- On medium stove temp, heat oil in frying pan. Saute the juliennned peppers. When limp remove. Soften cream cheese with the milk and then put in frying pan to melt a bit. Add the bouillon and keep stirring. it will look very lumpy. Put peppers back in pan and keep mixture warm. Meanwhile, boil the pasta til al dente. Drain pasta and place in bowl. Immediately add the peppers, and the cream chesses mixture and toss very well...add the grated cheese and contine to toss. Sprinkle chopped parsley on top and serve. Pass additional grated cheese at the table.
