Chili Con Carne With Beer
- 6 lbs. beef chuck, cut into 1/2" cubes
- 16 large garlic cloves, minced
- 2 tblsp. ground cumin
- 8 tblsp. chili powder
- 4 tsp. Worchestershire
- salt and pepper
- 4 fresh green chilis (such as jalepenos), diced
- 24 oz. canned tomato sauce
- 4 12 oz. bottles of beer, room temperature (I usually use Bud)
- For serving:
- sour cream
- grated sharp cheddar
- chopped onion
- In a large pot, sear the beef with the garlic. Add the spiced and mix to coat the beef. Add the beer and simmer about 15 minutes. Add the remaining ingredients and cook over medium-high heat for 1 hour. Lower heat and simmer for an additional 3 hours or until liquid is reduced and beef is tender to your taste. More beer may be added to adjust the consistency if necessary.
