Spicy Secret Chili
- 1/2 pound bacon
- 2 pounds ground beef
- 2-3 minced garlic cloves
- 2 medium onions
- 1 bottle of your favorite dark beer
- 1 handful of sliced jalapenos
- 1 28-ounce can Italian-style tomatoes, tomatoes chopped w/juices
- 2 15 1/2-ounce cans hot chili beans (with chipotle peppers) or other canned chili beans
- 1-2 small cans kidney beans.
- 1 small can tomato paste
- 1 package chili seasoning mix
- Optional:One tablespoon peanut butter. It cuts the tomato and adds a roundness and nuttiness that really completes the chili.

- Top with Grated cheddar cheese, Chopped onions, and Sour cream
- Cut bacon into small pieces. Cook bacon in heavy large pot on high heat until brown,add the chopped onions and garlic. Cook on medium stiring frequently until onions are tender. Add beef to pot and cook until brown. Add tomatoes with juices, beans and chili seasoning mix.Add Optional TBLSP peanut butter.This is where you can throw in you handful of jalapenos. Add one bottle of your favorite dark beer. Bring chili to boil. Reduce heat to medium-low and cook until thickened to desired consistency, stirring occasionally, Cook for 1 hour to 1 1/2 hours. Season to taste with salt and pepper.
- Ladle chili into bowls. Serve, passing cheese, onions and sour cream separately.
