Clean Eating Caramel Apple Snack Cake
- 2 cups Old fashioned oats (or 1 3/4 cups oat flour)
- 1/2 cup Baking stevia (or 1 cup sweetener that measures like sugar)
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/2 tsp Apple pie spice
- 1 1/2 tsp Caramel extract 1
- 1 tsp Almond extract (or vanilla extract)
- 4 Egg whites
- 1 Egg
- 1 cup (8 oz) Unsweetened applesacue
- 1 1/4 cup Apples, peeled and finely chopped (I used 1 very large apple)
- Optional:
- 1/4 cup chopped pecans or walnuts, stirred into batter
- Optional Topping:
- Tru Whip
- 3 WWP+*

- Preheat oven to 350 degrees. Spray a 9x9 inch square or 9 inch round baking dish with cooking spray.

- Blend dry ingredients in a blender or food processor, until oats are ground into a flour (skip this step if using oat flour.)

- Combine wet ingredients with dry in a bowl, and stir in chopped apples. Pour batter into prepared pan and bake 18-20 minutes, or until a toothpick comes out clean. Cut into 9 slices and enjoy with whipped topping if desired!
