Smokey Beef And Buffalo Chili With Black Beans

  1. In a large dutch oven or other big pot, melt butter over medium heat and brown the cubed sirloin.
  2. Drain and remove meat to a bowl.
  3. Add a little olive oil to the pot.
  4. Add onion, garlic, bell pepper, and serrano peppers and cook about 5 minutes.
  5. Add ground buffalo and brown, breaking up meat, about 10 minutes.
  6. Drain if necessary.
  7. Return sirloin to pot.
  8. Add all spices.
  9. Add tomato paste and stir to combine.
  10. Add wine, water, beef stock, stewed tomatoes, tomato sauce, and black beans and bring to a boil.
  11. Reduce heat and simmer about 2 hours.
  12. Remove bay leaves.
  13. Serve with shredded cheddar on top.
