Tilapia With Boiled Potatoes
- 2 potatoes cut into chunks
- 1 egg
- 4 tilapia fillets
- Bread crumbs
- Salt
- Pepper
- 2 tbsp butter
- 1 tbsp flour
- 1/2 c. milk
- Parsley
- Juice and zest of one lemon
- Boil pot of salted water and add potatoes.
- While potatoes are cooking:
- Melt 1 tbsp. butter in skillet.
- Beat egg.
- Mix bread crumbs with salt and pepper.
- Dip tilapia in egg and then in bread crumbs.
- Cook 3 min per side in melted butter.
- Remove fish from pan.
- Melt additional tbsp. butter
- Add flour and cook for 2 mins, stirring.
- Add milk. Bring to boil and then simmer 2 mins.
- Stir in parsley, salt, pepper, and lemon juice. Add fish and potatoes. Cook for 1 minute and serve.
