Jicama Salad W/ Cialntro & Chiles
- 1/4 c fresh lime juice
- 1/4 c olive oil
- 2 tsp sugar
- 1/2 tsp salt
- 1/4 tsp hot pepper sauce
- 4 oranges
- 1 lg jicama, peeled & julienned (~3c)
- 2 med cucumbers, peeled & sliced into rounds (~3 c)
- 1 med red onoin, thinly sliced
- 1 c coarsly chopped cilantro leaves
- 1-2 fresh jalapeno chiles (1 red, 1 green), finely chopped
- 1. Whisk together lime juice, oil, sugar, salt, hot peppersauce in large bowl
- 2. Trim peel & pith from oranges. Cut in half lengthwise, then slice into thin half-moons.
- 3. Add orange slices & remaining ingredients to dressing. Toss. Season to taste with salt and pepper. Cover and chill one hour or overnight. Serve on a bed of lettuce, garnished with additional orange slices if desired.
