Skillet Smothered Steak Tips
- 2 tablespoons vegetable oil
- 1 large red nion - halved and sliced thin
- Salt & Pepper
- 1 1/2 lbs sirloin steak tips (1'' thick)
- 1 cup chicken broth
- 2 tablespoons bbq sauce
- 2 tablspoons unsalted butter
- 1) Heat 1 tablespoon oil in large nonstick skillet over medium-high heat until shimmering.
- 2) Cook onion & 1/2 tsp of sale, covered until softened and lightly browned, about 5 min. Transfer to a plate
- 3) Pat steak dry with paper towels and season with S&P. Heat remaining oil in empty skillet until just smoking.
- 4) Cook steak until browned all over and cooked to desired doneness, approx 6 min per side. Transfer to a platter and tent with foil.
- 5) Add browned onions, broth, and bbq sauce to empty skillet and simmer over medium-low heat until slightly thickened, about 5 minutes.
- 6) Whisk in butter and season with S&P. Spoon onion mixture over steak tips & serve.
