Easy Peasy Spice-Rubbed Pork Tenderloin

  1. Prepare the grill to medium high heat. Mix the ingredients listed and rub on all sides of the pork tenderloin. Heat a teaspoon of olive oil in a frying pan and sear the spice-rubbed pork on high heat until browned all over (~5 minutes). This seals in the juices. Transfer the pork to the grill. Grill for 15-25 minutes until the temperature inside the pork is at 155 degrees Fahrenheit. Remove the pork from the grill, tent it in foil for 5-10 minutes so it reaches 160 degrees Fahrenheit or above. Cut in 1/2" slices, making sure to save the juice as you cut. Drizzle the juice over the pork. Serve with Grilled Pineapple Slices, Couscous and Grilled Asparagus.
