Oysters -- Cornmeal Fried W/ Homemade Tartar Sauce

  1. Tartar Sauce:
  2. Mix all ingredients well.
  3. Cover and chill.
  4. Oysters:
  5. Bring oysters close to room temperature in their own liquor.
  6. Heat a cast-iron skillet and add enough shortening for a shallow fry (about 1 to 1 1/2 inches). Mix the cornmeal, cornbread mix and S&P in a wide, shallow bowl.
  7. Remove oysters from their liquid and roll each in cornbread mix, coating well. Fry oysters in hot oil and drain on paper towels or a rack set over a sheet pan.
  8. Lightly salt each oyster and serve hot with homemade tartar sauce.
