Scalloped Potatoes And Ham
- 6 medium potatoes, pared and sliced
- boiling, salted water
- 3 Tbsp. butter or margarine
- 3/4 c. soft bread crumbs
- 1/2 tsp. paprika
- 1/8 tsp. dried, crushed thyme
- 2 Tbsp. flour
- 1 tsp. dry mustard
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 c. milk or light cream
- 2 c. cubed fully cooked ham
- 4 slices American cheese, cut up
- Cook potatoes in boiling, salted water for 10 to 15 minutes. Drain, reserving 1 cup of cooking liquid.
- Place potatoes in 8 x 8 x 2-inch baking dish.
- Melt butter or margarine.
- Remove 1 tablespoon butter; toss with bread crumbs, paprika and thyme and set crumbs aside.
- Into remaining butter, blend flour, mustard, salt and pepper.
- Add reserved cooking liquid and milk or cream. Cook and stir until thickened and bubbly.
- Stir in ham and cheese. Cook until cheese is melted.
- Pour sauce over potatoes and sprinkle with crumbs.
- Bake at 350u0b0 for 1 hour.
