Shrimp Wrapped In Snow Peas
- For Shrimp:
- 1 lb. large shrimp in shells
- 1 bay leaf
- For Marinate:
- 1/2 cup olive oil
- 3 tb white wine vinegar
- 3 tablespoon dijon mustard
- 1 tablespoon chopped shallots
- 1 teaspoon fresh minced ginger
- 1 minced garlic clove
- 1 tablespoon dill (can be fresh or dry)
- pinch sugar
- salt & pepper to taste
- To garnish Shrimp:
- 15 - 20 snow peas
- Add bay leaf to a large pot of boiling water and bring to a boil. Add shrimp to water and boil 2 - 3 minutes until shrimp turn pink. Rinse shrimp in cool water and remove shells.
- Add all ingredients for marinate and wisk until blended. Place cooled shrimp in gallon size zip lock bag along with marinate and place in refrigerator for at least 2 hours.
- Remove strings from snow peas. Bring small pot of water to boil and add snow peas. Blanche peas for 30 seconds. Remove from heat and drain. Immerse peas in ice water. Split peas length wise. Wrap pea half around middle of shrimp and secure with a toothpick.
