Matzah Spanakopita

  1. Preheat oven to 400F.
  2. Saute onions in 1 tbs butter until soft.
  3. Mix together with spinach, parsley,dill, feta and eggs. Season to taste w/ salt and pepper.
  4. Brush matzah with butter on both sides.
  5. Cut strips of matzot by cutting into thirds following the grain.
  6. Place a heaping teaspoon of spinach mixture on the end of each strip and fold like a flag making a triangle.
  7. Place on tray with silpat, seam side down. If using parchment brush it with butter.
  8. Bake for 25 minutes or until browned.
  9. Leftover spinach mix may be frozen.
