Matzah Spanakopita
- 12 Prepared Matzah
- 1/2 Cup Chopped onion
- 1 Tbs butter plus additional butter or margarine for brushing matzot
- 5 boxes frozen spinach, squeezed dry.
- 1/2 Cup chopped fresh parsley (do not pack)
- 1/2 Cup chopped fresh dill (do not pack)
- 3/4 lb feta,crumbled
- 2 Eggs
- Salt to taste
- Pepper to taste
- Preheat oven to 400F.
- Saute onions in 1 tbs butter until soft.
- Mix together with spinach, parsley,dill, feta and eggs. Season to taste w/ salt and pepper.
- Brush matzah with butter on both sides.
- Cut strips of matzot by cutting into thirds following the grain.
- Place a heaping teaspoon of spinach mixture on the end of each strip and fold like a flag making a triangle.
- Place on tray with silpat, seam side down. If using parchment brush it with butter.
- Bake for 25 minutes or until browned.
- Leftover spinach mix may be frozen.
