Turkey Chili

  1. TO COOK BEANS: Sort & rinse beans. Cover with water & soak overnight, OR bring to a boil for 5 minutes, remove from heat, cover & let rest for 1 hour. Drain, rinse & cover beans with water. Bring to a boil, cover & simmer approximately 1-1/2 hours or until nearly tender. Remove cover & continue cooking until completely tender. Check occasionally to determine if more liquid is needed. Set aside.
  2. FOR CHILI: Heat oil in a 2-qt. saucepan. Add meat, onion & garlic. Brown. Add all other ingredients, including beans. Simmer uncovered over low heat for 40 minutes. Remove bay leaf. Garnish with diced onion, diced fresh jalapenos, grated Monterey Jack cheese & chopped fresh cilantro.
