Southwestern Black Bean Soup

  1. Heat oil in a large sauce pan, add onion, carrots, celery, red pepper, and garlic. Saute 7 minutes or until softened. Add remaining ingredients bring to a boil. Reduce heat and simmer about 30 minutes. Remove bay leaf and serve with sour cream and tortilla chips.
