Southwestern Black Bean Soup
- 1 1/2 lbs turkey sausage
- 2 cans black beans undrained
- 1 cup white rice
- 2 cups low sodium chicken broth
- 1-2 tablespoons olive oil
- 1 1/2 cups chopped onion
- 3/4 cup carrots chopped
- 3/4 cup celery chopped
- 1 1/2 cups red bell pepper chopped
- 2 garlic cloves or shallots minced
- 1 cup sherry, wine, or beer.
- 2 tablespoons cumin
- 2 tablespoons chili powder
- 1 teaspoon chipolte chili powder
- 1 tablespoon oregano
- 2 teaspoons cilantro
- 2 tablespoons honey
- 1/2 teaspoons salt
- 1/2 teaspoon cinnamon
- 1/8 teaspoon pepper
- 2 cans (140z) diced tomatoes
- 1 bay leaf
- Heat oil in a large sauce pan, add onion, carrots, celery, red pepper, and garlic. Saute 7 minutes or until softened. Add remaining ingredients bring to a boil. Reduce heat and simmer about 30 minutes. Remove bay leaf and serve with sour cream and tortilla chips.
