Yiayia'S Feta Bread
- Nonstick cooking spray (for the pan)
- 1 tup flour
- 1 tablespoon baking powder
- 1 tup plain low-fat yogurt
- 3 tggs
- 1/3 tup corn oil
- 1 tup crumbled feta chees
- 1. Set the oven at 400 degrees. Spray a 12-cup muffin pan with nonstick cooking spray.
- 2. In a small bowl, combine the flour and baking powder. Drain any liquid from the top of the yogurt.
- 3. In a large bowl, gently mix the yogurt, eggs, and oil. Fold in the flour mixture, then the feta. Do not overmix. Divide the batter among the indentations.
- 4. Bake the muffins for 4 to 5 minutes. Lower the oven temperature to 350 degrees and continue baking for 15 to 20 minutes longer, or until the muffins are golden brown. Serve warm. Adapted from Penelope Kotidis
