Ultimate Spinach Lazagne
- 2 pkgs. frozen chopped spinach, thawed and sqeezed of water
- 2 Jars prepared marinara sauce of your choice
- 2 cloves garlice, crushed or finely chopped
- 2 TBS Olive Oil
- 2-3 lbs. low-fat or fat-free cottage cheese
- 1/4 Cup grated parmesean cheese, plus extra
- 3/4 lb. shredded mozarella cheese
- 1 egg, slightly beaten
- 2 TBS dried parsley, plus extra
- 1 Package lazagne noodles, cooked, rinsed and drained
- Fresh ground Pepper
- 1/2 C. sliced green olives (if desired)
- Fresh (or dried) Basil & Oregano to taste
- Heat drained spinach, 1 jar marinara sauce, garlic, olive oil, and fresh ground pepper to taste in sauce pan over medium heat. Let simmer bubbling gently while preparing the rest of the recipe.
- In a separate bowl, combine cottage cheese, egg, parmasean cheese, dried parsley and fresh ground pepper to taste. Mix well.
- In a 9x13x2 pan, layer 1/2 of the noodles, 1/2 of spinach mixture, 1/2 of cottage cheese mixture, 1/2 mozarella cheese, 1/2 of ground pepper and herbs. Follow with second half of ingredients in same order, and top with some extra grated parmesean, fresh ground pepper, sliced olives, and chopped fresh basil and oregano and extra dried parsley.
- Bake for 30-35 minutes.
- Meanwhile, heat second jar of marinara sauce.
- Take lazagne out of oven when done and let cool for 5-10 minutes before serving.
- Top one serving of lazagne with 1/8 cup of heated marinara sauce, some fresh ground pepper, and some fresh basil if desired.
