Florentine Lasagne
- 8 oz lasagne noodles
- 15 oz ricotta
- 2 cups spinach
- 2 eggs
- 1 jar spaghetti sauce
- 2 cans tomato paste
- 1 lb shredded mozzarella
- 1/2 lb mushrooms
- 1 carrot
- 2 shallots
- 2 cloves garlic
- 2 tbsp parmesan
- 1 bunch fresh basil
- salt & pepper
- Preheat oven to 400F
- Cook and drain pasta according to instructions
- Cut spinach into thin strips
- Cut mushrooms into slices
- Chop shallots and basil
- Grate carrot
- Lightly beat eggs
- Combine ricotta, spinach, eggs, salt & pepper
- Saute garlic, shallots, mushrooms, carrot, basil
- Combine spaghetti sauce and tomato paste
- Spread spaghetti sauce mix at bottom of pan
- Layer with lasagna, 1/2 of ricotta, 1/2 of mushrooms, spaghetti sauce, and mozarella
- Repeat layers once
- Top with lasagne, spaghetti sauce, and mozarella
- Bake uncovered for 35-40 minutes
