Una'S Shrimp Creole

  1. Melt butter; saute pepper, onion, celery and green onions for about 5 minutes.
  2. Add tomatoes and tomato paste with bay leaves. Simmer for 15 minutes.
  3. Add shrimp; simmer for 15 minutes. Dissolve cornstarch in 1 pint water and add to shrimp mixture. Simmer for 5 minutes.
  4. Add lemon juice and
  5. salt and pepper to taste.
  6. Simmer for 15 minutes.
  7. Serve over steaming rice or creamed potatoes.
  8. Might add a few drops of Tabasco or red pepper.
