Una'S Shrimp Creole
- 1/4 lb. butter
- 1 c. each: chopped green pepper, chopped onion, diced celery, diced green onions and tomato puree or 2 Tbsp. tomato paste
- 2 c. chopped canned tomatoes
- 1 oz. lemon juice (about 2 Tbsp.)
- 2 oz. cornstarch (about 2 Tbsp.)
- 2 bay leaves
- 2 to 3 lb. peeled shrimp with salt and pepper to taste
- Melt butter; saute pepper, onion, celery and green onions for about 5 minutes.
- Add tomatoes and tomato paste with bay leaves. Simmer for 15 minutes.
- Add shrimp; simmer for 15 minutes. Dissolve cornstarch in 1 pint water and add to shrimp mixture. Simmer for 5 minutes.
- Add lemon juice and
- salt and pepper to taste.
- Simmer for 15 minutes.
- Serve over steaming rice or creamed potatoes.
- Might add a few drops of Tabasco or red pepper.
