Patti'S Yam Yam Salad
- 1 can Chick peas, drained and rinsed
- 2 heads Diced roasted yams or sweet potatoes or squash
- 2 cups Cooked quinoa
- 1 head Diced peppers
- 2 handful Diced carrots
- 1 bunch Chopped cilantro
- 1 cup Pumpkin seeds
- 2 cups Coarse.y chopped spinach
- 1 bag Sweet kale salad mix large bag
- 1 bunch Arugula or other greens
- 1 cup EVOO
- 2 tablespoons Maple syrup or honey
- 6 tablespoon Balsamic vinegar
- 4 cloves Crushed garlic
- 2 tablespoons Dijon mustard
- 1 pinch S and p
- For dressing, combine everything listed from olive oil, down
- Mix all other ingredients together but only a bit of the greens. Add just a bit of the dressing and toss together.
- Keep extra dressing in fridge. When serving, add more greens each time and toss more dressing in.
- If u can't find sweet kale mix, it comes with sprouts, kale, chicory, dried cranberries and roasted pumpkin seeds. Throw out the dressing and still add more pumpkin seeds.
