Grandmother Davidson'S Fresh Cranberry Salad
- 1 Package fresh raw Cranberries
- 1 Cup Sugar
- 1 Orange
- 1 Celery Stalk
- 1 Medium Red Apple
- 1 3oz Box Cherry Jell-O
- 1/2 Cup Chopped Walnuts
- Prep: Prior to making the salad freeze the cranberries overnight. This recipe should be made the day before serving to allow the Jell-O to setup and the great favors to blend together.
- Chop up the cranberries either in a blender or food processor until you have fine pieces. Best to do about 1 cup at a time. Put into a large bowl.
- Peel the orange and remove the white membrane.
- Chop the orange and the apple into quarters. Cut the celery into about 1 inch pieces. Chop up each fruit one at a time into fine pieces using a blender or food processor. Add these to the cranberries.
- Add the optional finely chopped walnuts to the fruit mix.
- Make the Jell-O: Boil 3/4 cup water, add sugar, Jell-O mix and stir until dissolved.
- Add Jell-O mixture to the large bowl containing the fruit. If too thick, add more water a little at a time. A little water goes a long way. Refrigerate until serving. After about 3 hours in the refrigerator stir the mixture. Stir the mixture right before serving. The cranberry salad should be thick enough to sit in a pile on our plate without running.

- OPTIONAL: Use Mandarin oranges instead. Hand cut each Mandarin orange slice into quarters. Do not use a processor as they will be blended into a puree. Substitute Black Cherry Jell-O for the Cherry.
