Grandmother Davidson'S Fresh Cranberry Salad

  1. Prep: Prior to making the salad freeze the cranberries overnight. This recipe should be made the day before serving to allow the Jell-O to setup and the great favors to blend together.
  2. Chop up the cranberries either in a blender or food processor until you have fine pieces. Best to do about 1 cup at a time. Put into a large bowl.
  3. Peel the orange and remove the white membrane.
  4. Chop the orange and the apple into quarters. Cut the celery into about 1 inch pieces. Chop up each fruit one at a time into fine pieces using a blender or food processor. Add these to the cranberries.
  5. Add the optional finely chopped walnuts to the fruit mix.
  6. Make the Jell-O: Boil 3/4 cup water, add sugar, Jell-O mix and stir until dissolved.
  7. Add Jell-O mixture to the large bowl containing the fruit. If too thick, add more water a little at a time. A little water goes a long way. Refrigerate until serving. After about 3 hours in the refrigerator stir the mixture. Stir the mixture right before serving. The cranberry salad should be thick enough to sit in a pile on our plate without running.

  9. OPTIONAL: Use Mandarin oranges instead. Hand cut each Mandarin orange slice into quarters. Do not use a processor as they will be blended into a puree. Substitute Black Cherry Jell-O for the Cherry.
