Pork Chop Barbecue
- 1/2C Water
- 3TBS Vinegar
- 2TBS Sugar
- 1TBS Yellow Mustard
- 1/2tsp Salt
- 1/2tsp Black Pepper (ground)
- 1/4tsp Cayenne Pepper
- 1 Onion (thin wedges)
- 1/2C Ketchup
- 2TBS Worcestershire Sauce
- 2tsp Liquid Smoke
- 2TBS Safflower Oil
- 6 Pork Rib Chops (3/4")
- 1 Slice Lemon
- For sauce combine water, vinegar, sugar, mustard, salt, pepper, and cayenne in small pot. Add lemon slice and onion.
- Bring mixture to boil, reduce heat. Simmer uncovered, for 20 minutes. Stir in ketchup, worcestershire sauce, & liquid smoke. Return to boiling. Remove from heat; discard lemon slice.
- Mdeanwhile preheat ove to 350. In large skillet brown chops in hot oil over medium high heat.
- Place pork chops in a 3qt rectangle baking dish; pour sauce over.
- Bake, uncovered, for 25-30 mins or until meat juices run clear turning chops once. Remove to a serving platter. Pour sauce over all.
