Beer Cheese Soup

  1. Boil potatoes until soft and set aside.
  2. Sautee onions and leaks in butter until soft. Gradually whisk in flour. This will create a roux. Cook it down, but do NOT allow to brown.
  3. Whisk in chicken stock, beer, and cream. Add potatoes then cheese. Season and then blend until smooth.
  4. Afterward add to cup or bowl (or bread bowl) and garnish first with blue cheese then top with bacon bits and finally scallions.
  5. Enjoy!
