Pasta E Fagioli(Italian Bean Soup)

  1. Heat water and beans to boiling in Dutch oven; boil for 2 minutes.
  2. Remove from heat.
  3. Cover; let stand 1 hour.
  4. Add onion, tomato sauce, celery, garlic, meat, bouillon and salt to beans. Cover and simmer until beans are tender, about 2 hours (do not boil).
  5. Stir pasta into soup.
  6. Simmer until pasta is tender, about 10 to 15 minutes.
  7. Sprinkle with cheese when serving.
  8. Good with fresh Italian bread.
  9. Serves 5.
