Pasta E Fagioli(Italian Bean Soup)
- 5 c. water
- 8 oz. dried beans
- 1 large onion, chopped
- 1 large tomato or 1 c. tomato sauce
- 2 stalks celery, chopped
- 1 clove garlic, chopped
- 1/4 lb. salt pork, chopped
- 1 to 2 c. cooked ham, cut up
- 2 tsp. beef bouillon
- 1/2 tsp. salt
- 1/2 c. uncooked pasta (shells)
- grated Parmesan
- Heat water and beans to boiling in Dutch oven; boil for 2 minutes.
- Remove from heat.
- Cover; let stand 1 hour.
- Add onion, tomato sauce, celery, garlic, meat, bouillon and salt to beans. Cover and simmer until beans are tender, about 2 hours (do not boil).
- Stir pasta into soup.
- Simmer until pasta is tender, about 10 to 15 minutes.
- Sprinkle with cheese when serving.
- Good with fresh Italian bread.
- Serves 5.
