Grapenut Pudding With Lemon Saude
- Grapenut mixture: 1 quart milk
- 1 cup grapenuts cereal
- 2 egg yolks
- 4 tbsp sugar
- pinch of salt
- 1 tsp vanilla
- 2 egg whites beaten stiff
- Lemon sauce: 1/4 cup butter
- 2/3 cups sugar
- 2 tbsp flour
- 1 cup boiling water
- 2 tbsp lemon juice
- Bring milk and grapenuts to a boil
- Remove from heat and bring to room temperature
- Stir in 2 egg yolks and 4 tbsp sugar
- Add salt and vanilla. Stir to blend
- Fold in egg whites
- Pour in buttered baking dish and bake at 325 degrees for 45 minutes
- Lemon sauce: In a saucepan blend the butter, sugar and flour
- Gradually add the boiling water, boil for 3 mintes
- Whisk as cooking until suitable thickness
- Remove from heat and stir in lemon juice
- Pour some sauce over top of pudding and/or retain for serving individual portions
