Super Bowl: Tomato Salsa
- 2 Jalapenos stemmed and seeded
- 1/2 cup Cherry Tomatoes halved
- 1/2 onion quartered
- 1 can Peeled tomatoes whole 28 ounce {save juice}
- 2 cloves Garlic
- 1/2 Lime juiced
- 1/2 cup Cilantro stems discarded
- 1/4 teaspoon Cumin
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1. Preheat oven to 400.
- 2. Toss jalapenos, cherry tomatoes and onion with oil. Place on cooking pan roast until brown and slightly charred, about 15 minutes. Let cool.
- 3. In a blender , combine roasted vegetables, whole peeled tomatoes, garlic, lime juice, cilantro, cumin, salt, and pepper. Pulse to chop and combine, making sure not to over mix. After 4- 8 pulses check it.
- 4. Season with salt and pepper.
