Cactus Jacks Get Ya Going Catfish
- 1/2 cup mayo
- 1/2 tsp paprika
- 1 tsp cayenne pepper
- 1 Tablespoon minced onion
- 1 tsp chopped garlic
- 1/4 tsp kosher salt
- 1/4 tsp ground pepper
- 2 tsp honey Dijon mustard
- Mix all ingredients in bowl and let set in frig for at least 1 hour so the flavors intensify.
- Place the catfish on a sheet of aluminum foil, skin side down. (Allow enough foil to overhang so that you can pull up and seal the foil to create a pouch over the catfish.)
- Spread the sauce mixture over the top of each piece of catfish.
- Wrap up the foil so it creates a pouch for catfish to steam
- Place in a preheated (350) outdoor gas grill and let cook for approximately 35-45 minutes....Might need little bit longer ifen the catfish steaks are thick.
