Ham Roll-Ups Mandarin - 4 Servings
- 1 can Mandarin oranges
- 1 1/2 cups cooked long-grain rice
- 1/3 cup Best Foods mayonnaise
- 2 Tbs. chopped pecans
- 2 Tbs. snipped parsley
- 1 Tbs. sliced green onion
- 12 thin slices ham (Hillshire Farms honey ham)
- 1/4 cup orange marmalade (Smuckers)
- 1 Tbs. lemon juice
- 1/4 tsp. ground ginger (Spice Islands)
- Parsley sprigs
- Reserve 12 orange sections. Drain the remainder well and combine with the cooked rice, mayonnaise, pecans, parsley and onion. Divide mixture among ham slices. Roll ham around filling and place seam side down, in a 10 x 6 x 2 inch baking dish.
- Combine marmalade, lemon juice and ginger; brush over roll-ups. Bake covered with foil at 325 degrees for 10 minutes. Uncover and bake 10 minutes more.
- Garnish with reserved oranges and additional parsley.
