Cevapcici (Che-Vop-Chi-Chi) From Sarajevo
- 1 pound lean ground beef
- 1/2 pound ground lamb
- 1/2 pound ground pork
- 1 teaspoon salt
- 1 beaten egg white
- 2 teaspoons black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon baking soda
- 5 finely minced garlic cloves
- Ready in: < 30 minutes
- Combine the seasonings and grind them together before adding them to the meat. Mix all the ingredients together. Shape in thumb-sized sausages. Traditionally these sausages have no casing. Grill over wood is best, in a wood fired oven is traditional
- See above....serve with chewy sourdoughy pita, dolloped with a goat/sheep milk yogurt, sprinkled with raw red onions and a slight sprinkle of coriander/flat parsley/chervil
