Orange Roughy In Parchment Paper

  1. 1. Preheat Oven to 425
  2. 2. Toss tomatoes, onions, vinegar, oil and garlic in a bowl
  3. 3. Place one serving of the mixture in the center of a piece of parchment paper that is approx. 12 inches long.
  4. 4. Place one filet of Orange Roughy on top and season with salt and pepper. Pour 1 tablespoon of white wine on top to aid in the steaming. Add the herb sprig on top.
  5. 5. Fold up the parchment paper similarly to a present. These can be made before hand too.
  6. 6. Roast in the over for 20 minutes.
  7. SERVE!
