Tourtiere (French Canadian Meat Pie)
- 1 lb very lean pork (ground fine)
- 1 small onion, diced
- 1/4 tsp allspice
- 1/4 tsp cloves
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- salt and pepper to taste
- 1/2 cup mashed potatoes
- pastry recipe (below, or use your own)
- pastry
- 4 1/2 cups four
- 1 tsp salt
- 1 tsp baking powder
- 1 tbsp sugar
- 1 lb butter
- 1 tbsp vinegar
- 1 egg
- 1/2 cup water
- pastry
- sift together first 4 ingredients. mix next 4 and add to first mixture. form into pie-sized balls and freeze until needed (makes 5-6 crusts)
- filling
- fry meat with chopped onion until light brown. drain fat. add spices. mix in mashed potatoes. cool mixture. line 9 inch pan with pastry, fill with mixture. bake at 400 degrees for 45 minutes. best served with cranberries.
