Turkey Medallions In Creamy Sauce
- 18 oz turkey medallions or cut turkey breast
- 2 tablespoons sunflower oil
- 1 medium onion, finely chopped
- 1 garlic clove, finely chopped
- 7 oz cooking cream or substitute made from oats or soy
- 1/2 tablespoon mild mustard
- Salt/pepper
- 1/2 tablespoon chives
- 1. Put some salt on both sides of turkey medallions.
- 2. Place turkey in heavy based frying pan with oil over medium high heat and brown on both sides. Use a turner to remove from pan and set aside on a plate.
- 3. Put onion in the pan and fry about 5 minutes stirring frequently.
- 4. Return turkey to the pan. Cover with cream. Add garlic and mustard. Mix it all together. Bring to the boil and cook 12-15 minutes.
- 5. Adjust the seasoning and add chives.
