Pizza Muffins
- 2 1/2 cups flour
- 2 tsp. baking powder
- 2 tsp. dried basil or italian herbs
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1 1/4 cups milk
- 1/3 cup vegetable oil
- 1 egg
- 1 cup grated mozzarella, cheddar or other soft cheese
- 1/2 cup tomato sauce
- 1/2 cup diced tomatoes
- Preheat oven to 375 degrees F. Grease or line 12 regular muffin cups. Mix the first five dry ingredients together in a large bowl. Add milk, oil and egg, stirring only until ingredients are blended. Gently fold in remaining ingredients - batter will be thick. Add a touch more milk, if necessary.
- Spoon batter into muffin cups. Bake for 18 - 20 minutes - until tops are golden brown and toothpick inserted into center of muffin comes out clean. Serve warm. Feel free to add finely chopped sweet peppers or other chopped herbs.
