Chicken Orzo Salad
- Orzo
- Chickene breast in strips
- Marinade (terriyaki hot or Yoshida)
- Mandarin orange segments (save juice)
- Snow peas, green beans or sugar snap peas
- Sliced or slivered almonds (toasting optional)
- Olive oil
- Scallions or spring onions
- Fresh ginger
- Slice chicken breasts into strips or bite size pieces
- Marinate in sauce of choice for no more than 3-4 hours.
- Cook on grill in wok pan or on stove top
- Cook, microwave or steam the vegetable
- Cook orzo but do not over cook
- Drain orzo & drizzle with olive oil & some of mandarin orange juice.
- Add diced scallions/spring onions and diced fresh ginger.
- Keep orzo separate from chicken vegetable mixture.
- Mix cooked chicken, orange segments, almonds, vegetable, and some fresh sauce (not marinade sauce)
