Chicken Orzo Salad

  1. Slice chicken breasts into strips or bite size pieces
  2. Marinate in sauce of choice for no more than 3-4 hours.
  3. Cook on grill in wok pan or on stove top
  4. Cook, microwave or steam the vegetable
  5. Cook orzo but do not over cook
  6. Drain orzo & drizzle with olive oil & some of mandarin orange juice.
  7. Add diced scallions/spring onions and diced fresh ginger.
  8. Keep orzo separate from chicken vegetable mixture.
  9. Mix cooked chicken, orange segments, almonds, vegetable, and some fresh sauce (not marinade sauce)
