Carrot Raisin Cookies __ Gluten Free
- 1 1/2 C spelt flour or other gluten free flour
- 1 C oat flour
- 3 t baking powder
- 2 t cinnamon
- 2 t ground ginger
- 2/3 C raisins
- 1/2 C nuts, chipped
- 6 T coconut oil, warmed to a liquid consistency
- 3 T milk substitute
- 1 1/2 C carrots, grated
- 1/4 C plus 1 T honey
- 1/4 C plus 1 T brown rice syrup
- 1 egg
- dash of salt
- 1.Mix together all dry ingredients, raisins and nuts.
- 2. Mix all wet ingredients together, including carrots.
- 3. Combine dry to wet, making sure that carrots and raisins are well distributed. (note that honey and syrup may first be gently heated to facilitate mixing)
- 4. Spoon onto greased baking sheet and bake for about 8 minutes.
