Mom'S Banana Bread
- 1/2 cup unsalted butter
- 3/4 cup brown sugar
- 1 egg
- 1/2 cup unsifted stoneground wholewheat flour
- 1/2 cup unsifted unbleached white flour
- 1 tsp baking soda
- 3/4 tsp sea salt
- 1 1/4 cups mashed banana
- 1/4 cup plain yogurt
- 1 cup of chopped walnuts
- 1. Preheat oven to 350.
- 2. Mix the butter and sugar until light and creamy. Beat in the egg.
- 3. Sift together the whole wheat flour, white flour, and baking soda.
- 4. Combine the bananas and yogurt.
- 5. Add dry ingredients (including walnuts) banana mixture to the butter mixture, stirring to combine well.
- 6. Spoon into an oiled 9" by 5" loaf pan.
- 7. Bake 50 to 60 minutes, then cool for 10 minutes before transferring to a cooling rack.
