Peanut Sauced Chicken Satay

  1. 1.tinse and pat dry chicken. Cut lengthwise into 1-inch wide strips.
  2. 2.tombine soy sauce, oil, lemon juice, curry powder, sesame oil, coriander and garlic. Marinate chicken strips in plastic bag 1-2 hours.
  3. 3.tor peanut sauce, gradually stir 4-5 tablespoons hot water into peanut butter until smooth and of a sauce-like consistency. Stir in gingerroot and red pepper.
  4. 4.tkewer chicken strips and grill 5 to 6 minutes in closed grill over medium heat, brushing with marinade and turning halfway through.
