Peanut Sauced Chicken Satay
- 1 pound chicken breast half without skin
- 1/2 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon curry powder
- 1 teaspoon toasted sesame oil
- 1/4 teaspoon coriander
- 1 teaspoon garlic
- 1/4 cup smooth peanut butter
- 1/2 teaspoon ginger root, grated
- 1/8 teaspoon crushed red pepper
- 1.tinse and pat dry chicken. Cut lengthwise into 1-inch wide strips.
- 2.tombine soy sauce, oil, lemon juice, curry powder, sesame oil, coriander and garlic. Marinate chicken strips in plastic bag 1-2 hours.
- 3.tor peanut sauce, gradually stir 4-5 tablespoons hot water into peanut butter until smooth and of a sauce-like consistency. Stir in gingerroot and red pepper.
- 4.tkewer chicken strips and grill 5 to 6 minutes in closed grill over medium heat, brushing with marinade and turning halfway through.
