Turkey Stuffing
- 1 stick (4 oz.) butter
- 2 Onions chopped
- 4 stalks celery finely sliced
- 2-8 whole garlic cloves
- 2 sweet red bell peppers chopped
- Peanut oil
- 1 C. coarsely chopped or sliced mushrooms
- 2 T. mixed seasonings (ie puoltry seasoning)
- 1 C chopped nuts Cashews and walnuts)
- 1 C. chopped parsely
- 1/2 C wheat germ
- 1/2 - 1 1/2 lbs whole wheat croutons (depends on turkey size; 8 oz = ~ 6 cups)
- salt, soy sauce, brandy - optional
- saute in butter the onions, celery, garlic,and bell peppers
- In a large pan, saute the mushrooms in peanut oil.
- Combine the contents of the two pans and add the mixed seasonings, nuts, parsely, wheat germ, croutons.
- Add salt if you like.
- and maybe soy sauce or brandy to taste.
- Give it a few good stirs with a large wooden spoon.
- Lightly spoon the stuffing into the cavity of the turkey.
- makes 10-20 Cups.
