Spaghetti Pie
- 6 oz spaghetti
- 2 eggs beaten
- 1/4 cup grated Parmesan
- 2 Tbs butter
- 1/2 cup chopped onion
- 1 cup sour cream
- 1 lb sausage (Italian or turkey)
- 6 oz tomato paste
- Italian spices to taste (oregano, basil, etc.)
- 1 cup water
- 4 oz sliced mozzarella cheese
- Cook spaghetti according to instruction. Drain.
- Combine warm spaghetti with eggs and Parmesan cheese. Pour into buttered 10-inch pie plate and press to form "pie crust."
- Remove sausage from casing, crumble and brown over medium heat. Drain fat. Add tomato paste, spices and water. Mix and simmer for 10 minutes.
- Pour sausage mix into pie as crust filling.
- Saute onions in butter over medium heat until soft. Remove from heat and add sour cream. Pour over sausage mixture as topping.
- Bake at 350u0b0 for 25 minutes. Place mozzarella slices on top and bake an additional 5-10 minutes until melted. Let rest a few minutes then slice as pie. Serve with red wine and salad.
