Super Bowl: Potato Skin Bites
- 3 Russet Potatoes scrubbed clean
- 2 tablespoons Olive Oil
- 1 Salt and Pepper to taste
- 6 slices Bacon cooked and crumbled
- 1 1/2 cups Cheddar Cheese shredded
- 3 Scallions thinly sliced
- 1 Sour Cream for serving
- 1 pinch Cayenne Pepper
- 1. Preheat oven to 400.
- 2. Slice potatoes into 1/2 inch slices.
- 3. In a large bowl, toss potato rounds in olive oil.
- 4. Season with salt, pepper, cayenne, and garlic powder. Toss until rounds are evenly coated.
- 5. Place in a single layer on baking sheets.
- 6. Bake for 30 - 40 minutes, until lightly browned and tender, flipping halfway through.
- 7. Top each round with cheese and bacon. Broil for 2- 3 minutes.
- 8. Top with sour cream and scallions. Serve.
