Super Bowl: Potato Skin Bites

  1. 1. Preheat oven to 400.
  2. 2. Slice potatoes into 1/2 inch slices.
  3. 3. In a large bowl, toss potato rounds in olive oil.
  4. 4. Season with salt, pepper, cayenne, and garlic powder. Toss until rounds are evenly coated.
  5. 5. Place in a single layer on baking sheets.
  6. 6. Bake for 30 - 40 minutes, until lightly browned and tender, flipping halfway through.
  7. 7. Top each round with cheese and bacon. Broil for 2- 3 minutes.
  8. 8. Top with sour cream and scallions. Serve.
