Italian White Bean Stew
- Good glub of olive oil
- 4 cloves of garlic
- Half an onion
- 1 large carrot
- Macaroni
- 2 chicken stock cubes
- 2 pints of water
- Can of tomatoes
- Can of white beans
- Bag of baby spinach
- Mozzarella or another mild cheese
- Spices - black pepper, salt and oregano
- In one pan, half-boil the macaroni. I use a large handful for two people.
- Put another big stew pot over low heat, pour in several tablespoons of olive oil, the garlic, onion and carrot. Stir around for about 1 minute. Throw in the stock cubes and mash them up a bit. Pour in the water (boil it first if you can).
- Take the macaroni off the heat, drain it and pour it into the big pot. Add the can of tomato and the can of bean. After it stews for awhile and starts to reduce, put in the spices. About three minutes before you intend to serve it, put in the spinach and finally the cheese.
- This serves 2 people with plenty for dinner and some leftover. And it is delicious!
